EASY BREAD

EASY BREAD
Serves: makes 2-3 loaves.
Ingredients
  • 2 packets yeast
  • 2 tsp. salt
  • 1/3 c. oil or softened butter
  • 1/3 c. honey or sugar
  • 2/3 c. powdered milk solids (optional)
  • 2 eggs
  • 2 c. warm water
  • 7-8 c. flour (for variety, you can use half whole wheat or rye flour)
Instructions
  1. Have all ingredients at room temperature. Put the first 7 ingredients in a large bowl, along with 3 cups of the flour. Beat at medium speed for 10 minutes. By hand, stir in 3 more cups of the flour until the dough is firm enough to knead. Put 1 cup of the flour on your kneading surface. Turn out the dough on this flour. Start kneading, working in additional flour as necessary to keep dough from sticking. Knead 10 minutes until dough is smooth and elastic, adding more flour if necessary. Cover the dough with plastic wrap and a towel and let it rest 20 minutes. (Clean up time!) Punch down by kneading a few strokes. Divide dough in half and shape into loaves. Make sure all the air bubbles are out!
  2. Put in greased loaf pans, brush with oil; cover with plastic wrap. Refrigerate anywhere from 2-24 hours. Remove from refrigerator at least 15 minutes before baking in 375 degree preheated oven for 35-40 minutes.
