CREAM FILLED CUPCAKES
Serves: Makes 36.
Ingredients
CAKE:
- 2 c. sugar
- 2½ c. flour
- 1 tsp. baking powder
- 1 c. buttermilk
- 1 c. oil
- 1 c. hot water
- ⅓ c. cocoa
- ¼ tsp. salt
- 2 eggs
- 1 tsp. vanilla
- 2 Tbsp. soda
FILLING:
- ½ c. sugar
- ⅓ c. milk
- ⅔ c. Crisco
- ¼ tsp. salt
- 1 Tbsp. water
- 1 tsp. vanilla
- ½ c. powdered sugar
- Chocolate frosting
Instructions
- Mix cake ingredients well and put in cupcake liners. Bake at 350 degrees about 20 minutes.
- FILLING:
- Scoop some of the cake out of each center. Mix ingrediants and beat well for 5 minutes. Fill cakes with filling and frost with chocolate frosting.
