BAKED RICE PUDDING

BAKED RICE PUDDING
Serves: 6 servings.
Ingredients
  • 4 c. milk
  • 1/2 c. raisins
  • 3 eggs, beaten
  • 1/2 c. sugar
  • 1/2 tsp. salt
  • Cinnamon
  • 1/2 c. long grain rice
  • 1/4 c. butter
  • 1 tsp. vanilla
Instructions
  1. Bring 2 cups milk, uncooked rice, and raisins to boiling. Reduce heat. Cover and cook over very low heat 15 minutes or until rice is tender. Remove from heat and stir in butter until melted. In a mixing bowl, stir eggs, sugar, vanilla, salt, and other 2 cups milk together. Gradually stir rice mixture into egg mixture. Bake for 30 minutes at 325 degrees in 10x6x2 inch baking dish or pan; stir well. Then sprinkle top with cinnamon and bake for 15-20 minutes more until knife inserted in the middle comes out clean. Best if eaten while warm.
