WILD AND CHEESY CHICKEN CASSEROLE
Serves: 6-8
Ingredients
- 1 (6 oz.) box Riceland long grain & wild rice
- 2 Tbsp. butter
- ¼ c. green pepper, diced
- ¼ c. celery, diced
- ¼ c. green onions & tops, chopped
- 1 (4 oz.) can sliced mushrooms
- 1 (10 l/2 oz.) can cream of mushroom soup
- ⅔ c. milk
- 2 c. cooked chicken, cubed
- 1 c. Cheddar or American cheese, grated
Instructions
- Cook rice according to package directions. Melt butter. Add onion, celery, green pepper and mushrooms. Saut gently until tender. Mix with remaining ingredients and pour into buttered casserole. Garnish with slivered almonds. Bake at 425 degrees for 30 minutes. Cooked shrimp, beef or pork may be substituted for chicken.
