VEGETABLE SOUP (Dad's Mulligan Stew)
Ingredients
- 2 lb. soup bone with meat
- 2 qts. water
- 2 tsp salt
- 2 chicken bouillon cubes
- ½ c. diced carrots
- ½ c. diced celery
- ½ c. diced onion
- ½ c. cabbage
- 1 c. diced potato
- ½ c. peas
- 1 c. tomatoes
- ¼ c. diced turnip
- Dash of pepper
- Parsley
- DUMPLINGS
- ½ c. flour
- ½ tsp. salt
- ½ tsp. baking powder
- 1 egg
Instructions
- Wash meat. Cover with water. Add salt, bouillon cubes and pepper.
- Simmer until meat is well done. Remove meat and add other ingredients. Simmer until vegetables are done. Cut meat off the bone and add to the soup. Drop dumplings on top of soup and simmer covered for 10 minutes.
- DUMPLINGS
- Mix dry ingredients. Add beaten egg and stir well. Add a bit of milk if needed to make soft dough. Cook in covered soup.
