SKILLET CHICKEN FAJITAS

Ingredients
Chicken:
- 1 lb chicken breasts or tenderloins sliced thin
- 2 tbsp cilantro or parsley (can exclude if desired)
- 2 tsp olive oil
- 1 tsp oregano
- ½ tsp hot sauce (optional but suggested)
- ½ tsp chili powder
- ½ tsp salt
- ¼ tsp garlic powder
- ¼ tsp ground cumin
- juice of ½ a lime
Veggies:
- 2 tsp olive oil
- 1 red bell pepper, sliced thin
- 1 yellow bell pepper, sliced thin
- ½ yellow onion, sliced thin
- 1 tsp chili powder
- ½ tsp salt
Instructions
- In large bowl, combine all the chicken ingredients except the lime juice. Toss the chicken until coated, cover bowl, and refrigerate for 15-20 minutes.
- Preheat a skillet over high heat with 2 tsp of oil. When skillet is hot, add in all the Veggies ingredients. Saute the pepper and onions for about 4 minutes or until they are golden and have softened slightly.
- Remove the peppers and onions from the skillet and set aside.
- Add another 2 tsp oil to the hot skillet. Add the chicken mixture and saute until the chicken is cooked through.
- Add the peppers and onions back into the skillet and add the juice of half a lime.
- Cook everything together for about one minute, then serve immediately.
- Serve fajitas in tortillas or on lettuce. Can be eaten plain or topped with salsa, cheese, lettuce, guacamole, sour cream, tomatoes, etc.
