PEPPERMINT CHOCOLATE ICE CREAM DESSERT

Ingredients
CRUST:
- ¼ c. margarine
- 35 vanilla wafers, crushed
CHOCOLATE LAYER:
- 3 eggs, separated
- ½ c. margarine
- 3 sq. unsweetened chocolate
- 1-1/2 c. powdered sugar
- 1 tsp. vanilla
- ¾ c. chopped nuts
ICE CREAM:
- ½ gal. peppermint ice cream OR
- 1 c. crushed peppermint candy mixed in ½ gal. vanilla ice cream
Instructions
- CRUST:
- Melt margarine and make crust with the vanilla wafers. Put in 9x13 inch pan. Freeze. Save some to put on top.
- CHOCOLATE LAYER:
- Beat 3 egg whites stiffly. Melt margarine and chocolate in double boiler, gradually stir in egg yolks, sugar, vanilla. Let cool. Beat chocolate mixture until smooth. Add nuts to chocolate mixture. Fold in stiffly beaten egg whites. Spread over frozen crumb mixture. Place in freezer until hardened.
- ICE CREAM:
- Spread softened ice cream over frozen chocolate layer. Sprinkle crumbs over top. Freeze. Can be kept for days and days.

I’ve made this dessert for years, but lost the recipe. When my best friend asked me to make this for her birthday, I was thrilled to find the exact recipe on line.
