MOM'S SWEDISH FRUIT SOUP
Ingredients
- 1 c. dried prunes
- 1 c. dried peaches
- 1 c. dried pears
- 1 c. dried apricots
- ½ c. raisins
- 2 apples
- 2 Tbsp. vinegar
- 1 c. fruit juice
- 2 c. sugar
- ⅛ tsp. salt
- ½ tsp. cinnamon (or 1 stick cinnamon)
- ½ c. tapioca
- 1 tsp. cornstarch
Instructions
- Soak dried fruit overnight in water. Use this water for cooking fruit. Simmer slowly adding the fruit juice and sugar. Cut up a peeled apple and add to the fruit. Add the tapioca and cornstarch thinned in little cold water, when fruit is about done. Cook until tapioca is done.
- N.B. For variation, add red hots to suit taste just before removing from fire.
