ITALIAN CREAM CAKE
ITALIAN CREAM CAKE
Serves: Makes 12-16 servings.
Ingredients
- 5 eggs, separated
- 1 c. shortening
- 1 stick margarine
- 2 c. sugar
- 2 c. all-purpose flour
- 1 tsp. baking powder
- ½ tsp. salt
- 1 c. buttermilk
- 1 tsp. vanilla
- 1 c. flaked coconut
- 1 c. chopped nuts
FROSTING:
- 1 stick margarine
- 1 (8 oz.) pkg. cream cheese
- 1 box confectioners' sugar
- 1 tsp. vanilla
- 1 c. chopped nuts
Instructions
- Beat egg whites until stiff; set aside. Cream shortening, margarine and sugar. Add egg yolks, one at a time. Add dry ingredients, buttermilk and vanilla. Stir in coconut and nuts. Fold in beaten egg whites. Bake in three 8 inch layer pans at 350 degrees for 30 minutes.
- FROSTING:
- Mix all ingredients until smooth and spread on cake.
