FROZEN WALDORF SALAD
- 2 eggs, slightly beaten
- ½ c. sugar
- ½ c. pineapple juice
- ¼ c. lemon Juice
- ⅛ tsp. salt
- ½ c. diced celery
- ½ c. crushed pineapple, drained
- 2 med. apples, diced
- ½ c. nuts
- 1 c. Cool Whip
- Combine and cook eggs, sugar, juices and salt until it thickens, using low heat. Add fruit and nuts after egg mixture is cool. Fold in Cool Whip. Freeze in muffin cups or pan. Yield: 3-4 servings.
