FROZEN LEMON PIE
Ingredients
- 2 eggs, separated
- ⅓ c. lemon juice (real lemon)
- 1 Tbsp. grated lemon rind
- 1 c. cream, whipped
- ½ c. sugar
- ½ c. crumbled graham crackers
Instructions
- Beat egg yolks; add lemon juice and rind. Add ¼ c. of sugar. Cook over a low heat, stirring constantly. Cool. Beat egg whites with 2 tablespoons of sugar and fold into cooked mixture. Whip cream with 2 tablespoons of sugar and add last. Line a greased pan with graham cracker crumbs. Add filling and sprinkle few crumbs on top and freeze. Cut about 5-10 minutes before eating.
