EGG FOO YOUNG
Ingredients
- 6 eggs
- 1 can bean sprouts, well drained
- 4 green onions, thinly sliced with tops (or ½ c. shredded onion)
- ½ c. cooked chicken or cooked pork
- 2 Tbsp. shortening
- 1 Tbsp. cornstarch
- 2 Tbsp. cold water
- 1 c. chicken stock or chicken broth
- 2 Tbsp. soy sauce
Instructions
- Beat eggs well and add onion, drained bean sprouts and meat. Heat the shortening in a heavy skillet. Drop mixture by large spoonfuls. Brown on one side and turn and brown on the other side. Remove to large platter and serve with sauce made this way:
- SAUCE: Soften the cornstarch in 2 tablespoons of cold water. Add it to cup of chicken broth. Add 2 tablespoons of soy sauce. Cook, stirring until sauce thickens.
