SKILLET CHICKEN FAJITAS

Ingredients
Chicken:
  • 1 lb chicken breasts or tenderloins sliced thin
  • 2 tbsp cilantro or parsley (can exclude if desired)
  • 2 tsp olive oil
  • 1 tsp oregano
  • ½ tsp hot sauce (optional but suggested)
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¼ tsp ground cumin
  • juice of ½ a lime
Veggies:
  • 2 tsp olive oil
  • 1 red bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • ½ yellow onion, sliced thin
  • 1 tsp chili powder
  • ½ tsp salt
Instructions
  1. In large bowl, combine all the chicken ingredients except the lime juice.  Toss the chicken until coated, cover bowl, and refrigerate for 15-20 minutes.
  2. Preheat a skillet over high heat with 2 tsp of oil.  When skillet is hot, add in all the Veggies ingredients.  Saute the pepper and onions for about 4 minutes or until they are golden and have softened slightly.
  3. Remove the peppers and onions from the skillet and set aside.
  4. Add another 2 tsp oil to the hot skillet.  Add the chicken mixture and saute until the chicken is cooked through.
  5. Add the peppers and onions back into the skillet and add the juice of half a lime.
  6. Cook everything together for about one minute, then serve immediately.
  7. Serve fajitas in tortillas or on lettuce.  Can be eaten plain or topped with salsa, cheese, lettuce, guacamole, sour cream, tomatoes, etc.
