PUMPKIN CAKE
 
Ingredients
  • 2 c. sugar
  • 1½ c. cooking oil
  • 4 eggs
  • 3 c. plain flour
  • 2 tsp. baking powder
  • 2 tsp. soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • ½ c. milk
  • 2 c. cooked, mashed pumpkin
  • 1 c. chopped pecans
  • ½ c. raisins (optional)
  • 1 (8 oz.) pkg. cream cheese
  • ½ stick butter
  • 1 lb. powdered sugar
  • 1 tsp. vanilla
Instructions
  1. Combine and beat well sugar, cooking oil, and eggs. Sift together flour, baking powder, soda, salt, and cinnamon. Add to mix. Blend in milk, pumpkin, pecans, and raisins (optional). Put into three greased 9 inch cake pans. Bake at 300 degrees for 40 minutes, or until toothpick comes out clean.

  3. Beat cream cheese, butter, powdered sugar, and vanilla until creamy.
