PINEAPPLE RICE FLUFF
- ½ c. rice
- 1-1/2 c. milk
- ¼ tsp. salt
- 1 Tbsp. gelatin
- 1 Tbsp. canned pineapple juice
- 1 c. pineapple, diced or crushed
- ½ c. sugar
- 2 Tbsp. lemon juice
- 1 c. heavy cream (1/2 pt.)
- Cook rice in milk and salt until tender. Soften gelatin in pineapple juice, dissolve over hot water. Combine with hot rice and blend thoroughly. Then add pineapple, sugar and lemon juice. Cool. Fold in the whipped cream and turn into a previously wet mold. Chill, unmold and garnish with additional pineapple.
