MERINGUE FOR 9-INCH PIE
 
Ingredients
  • 3 egg whites
  • ¼ tsp. cream of tartar
  • 6 Tbsp. sugar
  • ½ tsp. vanilla flavoring
Instructions
  1. Beat egg whites with cream of tartar until frothy. Gradually beat in sugar, a little at a time. Continue beating until stiff and glossy. Do not underbeat (beat until sugar is dissolved). Beat in vanilla.
  2. Pile meringue onto hot pie filling, sealing at edge of crust to prevent shrinking and weeping. Swirl up into peaks as desired. Bake at 400 degrees in hot oven for 8-10 minutes until golden brown.
