LEMON BUTTERMILK CAKE
- 1 c. butter or oleo 3 c. sugar
- 6 egg yolks
- 2 Tbsp. lemon extract
- 3 c. flour (take out 6 tsp. flour & add 6 tsp. cornstarch instead)
- 1 c. buttermilk
- 1 tsp. soda
- ½ tsp. baking powder
- ½ tsp. salt
- Cream together butter and sugar. Add egg yolks and lemon extract. Add alternately flour and buttermilk. Then add the soda, baking powder and salt. Beat egg whites and fold in last. Bake 1 hour at 350 degrees in angel food pan. Let cool in the pan.
