ITALIAN CREAM CAKE
Serves: Makes 12-16 servings.
 
Ingredients
  • 5 eggs, separated
  • 1 c. shortening
  • 1 stick margarine
  • 2 c. sugar
  • 2 c. all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1 c. buttermilk
  • 1 tsp. vanilla
  • 1 c. flaked coconut
  • 1 c. chopped nuts
FROSTING:
  • 1 stick margarine
  • 1 (8 oz.) pkg. cream cheese
  • 1 box confectioners' sugar
  • 1 tsp. vanilla
  • 1 c. chopped nuts
Instructions
  1. Beat egg whites until stiff; set aside. Cream shortening, margarine and sugar. Add egg yolks, one at a time. Add dry ingredients, buttermilk and vanilla. Stir in coconut and nuts. Fold in beaten egg whites. Bake in three 8 inch layer pans at 350 degrees for 30 minutes.

  3. Mix all ingredients until smooth and spread on cake.
