FROZEN FRUIT COCKTAIL DAZZLER
- 1 (#2½) can fruit cocktail
- 1 tsp. unflavored gelatin
- 2 Tbsp. lemon juice
- 1 (3 oz.) pkg. cream cheese
- ¾ c. mayonnaise
- Dash of salt
- ⅔ c. whipping cream
- ½ c. sugar
- ½ c. chopped nuts
- Drain cocktail. Soak gelatin in lemon juice. Dissolve over hot water. Blend the cream cheese with mayonnaise and salt. Stir in gelatin. Whip cream until stiff, adding sugar gradually during last stages of beating. Fold in the cheese mixture, nuts and fruit cocktail. Pour into a refrigerator tray lined with waxed paper. Freeze until firm, about 4 hours. Turn out on platter. Remove paper and cut into slices. Garnish with salad greens. Let stand at room temperature a few minutes before serving to enhance flavor and the texture.
