EGGPLANT AND CHEESE CASSEROLE
- 1 med. sized eggplant
- 2 Tbsp. grated onion
- 1-1/2 c. grated cheese
- salt and pepper
- 2 Tbsp. butter
- buttered crumbs
- Peel, dice, and cook eggplant until tender. Add onions, butter, cheese and seasoning. Place in greased baking dish. Top with crumbs. Bake 20 minutes at 300 degrees.
