- ¼ lb. bacon
- 1 med. onion, minced
- 1 c. chopped celery
- ½ red or green pepper, chopped
- 1 can (303) tomatoes

- ¼ c. New Orleans molasses
- 1 tsp. salt
- Pepper to taste
- 1 Tbsp. cinnamon
- ⅛ tsp. nutmeg

- Cut ¼ lb. bacon into slivers and brown lightly in skillet. Add the minced onion, celery, and peppers and cook lightly in the bacon grease. Add tomatoes, vinegar, sugar and spices and cook slowly for 10 minutes until sauce is quite thick. Add beans and mix well. Pour into casserole. Dot top of beans with long thin chunks of bacon square. Push chunks down until only top shows. Drool the molasses over the beans and bake in slow oven for about 3 hours. (Beans will be quite moist when hot.)
