CUSTARD PIE
- 4 eggs
- ⅔ c. sugar
- ½ tsp. salt
- ¼ tsp. nutmeg
- 2-2/3 c. scalding hot milk
- 1 tsp. vanilla
- Beat lightly 4 eggs. Beat the remaining ingredients into the eggs. Pour into 9 inch pastry-lined pie pan. Bake until a silver knife inserted into the side of filling comes out clean. The center may still look a bit soft but will set later.
- Caution: Too long baking will make custard watery. Bake in 450 degree oven for 15 minutes, then 350 degree oven to finish. Time: 25-30 minutes in all.
