CREAM FILLED CUPCAKES
Serves: Makes 36.
 
Ingredients
CAKE:
  • 2 c. sugar
  • 2½ c. flour
  • 1 tsp. baking powder
  • 1 c. buttermilk
  • 1 c. oil
  • 1 c. hot water
  • ⅓ c. cocoa
  • ¼ tsp. salt
  • 2 eggs
  • 1 tsp. vanilla
  • 2 Tbsp. soda
FILLING:
  • ½ c. sugar
  • ⅓ c. milk
  • ⅔ c. Crisco
  • ¼ tsp. salt
  • 1 Tbsp. water
  • 1 tsp. vanilla
  • ½ c. powdered sugar
  • Chocolate frosting
Instructions
  1. Mix cake ingredients well and put in cupcake liners. Bake at 350 degrees about 20 minutes.
  2. FILLING:
  3. Scoop some of the cake out of each center. Mix ingrediants and beat well for 5 minutes. Fill cakes with filling and frost with chocolate frosting.
