BRAN MUFFINS
Serves: Makes about 100 muffins.
 
Ingredients
  • 4 c. Kellogg's All-Bran cereal
  • 2 c. Nabisco 100% Bran cereal
  • 1 c. dates, diced (optional)
  • ½ c. raisins
  • 1 c. margarine
  • 2½ c. sugar
  • 1 tsp. salt
  • 4 eggs
  • 5 c. flour
  • 6 tsp. baking soda
  • 1 qt. buttermilk
Instructions
  1. Pour 2 cups boiling water over bran cereals, dates, and raisins; cool. Cream margarine, sugar, and salt. Then add eggs, flour, baking soda, and buttermilk. Add cereal mixture. This batter may be stored in refrigerator for a month; use for muffins as needed. Bake at 400 degrees for 20 minutes.
