APRICOT SALAD
 
Ingredients
Gelatin:
  • 2 pkgs. orange Jell-O
  • 3 c. 1iquid (2 being hot water)
  • 1 c. juice (pineapple & apricot)
  • 1 (#2) can apricots, cut fine
  • 1 sm. can crushed pineapple
  • 10 cut-up marshmallows
Topping:
  • 1 egg
  • ½ c. sugar
  • ½ c. juice (pineapple & apricot)
  • 2 Tbsp. flour
  • 2 Tbsp. butter
  • ⅓ cup whipped cream (fold in when topping is cool)
Instructions
  1. Dissolve Jell-O in hot water. Stir in remaining liquids, apricots, pineapple, and marshmallows. Refrigerate till begins to congeal.
  2. Topping:
  3. Mix egg, sugar, juice, flour and butter in saucepan and cook until it thickens. Cool, then add ½ cup whipped cream. Spread on top of congealed apricot salad.
