DAD'S CURRIED PORK AND RICE
Serves: 4-5
Ingredients
- 1-1/2 lbs. pork steak
- 1 med. onion, chopped
- ¼ c. celery, chopped
- 1 chicken bouillon cube
- 1 can chicken broth
- 1 sm. apple
- 1-1/2 c. milk
- 3 Tbsp. butter
- 3 Tbsp. flour
- ½ tsp. salt
- pepper, as desired
- 1 Tbsp. curry powder
- ½ lb. rice
Instructions
- Cut meat into 2x2 inch pieces. Season meat. Brown in shortening. Add 2 cups water and the bouillon cube, onion and celery. Let this simmer until meat is done. Keep adding the chicken broth so there will be at least one cup of broth when done.
- In a deep saucepan melt butter or oleo and add the flour and curry powder. Stir until all is well mixed. Add the meat with its liquid and the milk. Stir until all is well blended and becomes smooth. Let simmer 10 minutes, stirring often. Just before you serve, grate in most of the apple. If more curry is desired, add. If milder taste, add more milk. Thicken more, if desired. Serve over fluffy rice.
