CARAMEL CORN (Jinny's)
Ingredients
- 2 c. brown sugar
- 2 sticks oleo or butter
- ½ c. white Karo syrup
- pinch of cream of tartar
- ½ tsp. salt
- 1 tsp. baking soda
- 7 qt. popcorn
Instructions
- Bring to a boil and boil for 5 minutes or to 248 degrees. Remove from heat and add 1 teaspoon baking soda. Pour over 7 quarts popped corn. Mix well in roaster pan. Put in oven (250 degrees) for 1 hour, stirring every 15 minutes or so. Spread out on wax paper when done.

Caroline received a recipe from her Secret Santa that was very similar except it added a 1/2 teaspoon of vanilla with the baking soda to the mix. It also added 3+ cups of pecans over the popcorn before pouring the syrup over the popcorn and roasting in the oven. Very delicious!
