BEEF CHILI

Serves: 4 servings
Ingredients
- 1 lb ground beef (or sub ground chicken or turkey)
- ½ large onion diced
- ½ green pepper diced
- 2 Tbsp oil
- 2 (14.5 oz) cans diced tomatoes (do not drain)
- 1 (15 oz) can red kidney beans
- 2 garlic cloves
- 1 Tbsp chili powder
- 1 Tbsp cumin
- 1 tsp oregano
- ½ tsp salt
- cayenne pepper (optional for heat)
- diced jalapenos (optional for heat)
Instructions
- Chop up the onion and green pepper. Add to pan with oil and cook until soft (about 3-4 minutes).
- Add beef and stir until browned.
- Combine all remaining ingredients, stir well, and simmer for about 30-40 minutes.
- Taste and adjust seasonings for taste.
- Eat plain or top with saltines, cheese, sour cream, avocado, jalapenos, etc.
