BAKED STUFFED SHRIMP
Ingredients
- 12 jumbo shrimp (about 5" long)
- 4 Tbsp. butter
- ½ tsp. paprika
- 2 Tbsp. crushed potato chips
- ¼ c. cracker meal
- 3 Tbsp. grated Parmesan cheese
- Lemon wedges
Instructions
- With a sharp knife cut the shrimp from the underside through the meat but not through the shell. Wash and devein. Put a toothpick under the meat but over the shell at both ends to keep the shrimp in flat position. Otherwise it will curl up when baked. Melt the butter and add the paprika and cook slowly for 10 minutes to take the raw taste out of the paprika. Add potato chips, cracker meal, cheese. Cover shrimp with this mixture. Place shrimp in shallow baking dish with a little water to keep from drying. Bake 20-25 minutes in 350 degree oven. Serve with lemon wedges.
