APRICOT SALAD
Ingredients
Gelatin:
- 2 pkgs. orange Jell-O
- 3 c. 1iquid (2 being hot water)
- 1 c. juice (pineapple & apricot)
- 1 (#2) can apricots, cut fine
- 1 sm. can crushed pineapple
- 10 cut-up marshmallows
Topping:
- 1 egg
- ½ c. sugar
- ½ c. juice (pineapple & apricot)
- 2 Tbsp. flour
- 2 Tbsp. butter
- ⅓ cup whipped cream (fold in when topping is cool)
Instructions
- Dissolve Jell-O in hot water. Stir in remaining liquids, apricots, pineapple, and marshmallows. Refrigerate till begins to congeal.
- Topping:
- Mix egg, sugar, juice, flour and butter in saucepan and cook until it thickens. Cool, then add ½ cup whipped cream. Spread on top of congealed apricot salad.
